Description
Aged between 3 to 5 months, this semi-hard cheese is easily recognizable by its white colour and blue veins. It has a compact yet crumbly and creamy texture and a strong salty and nutty flavor that lingers pleasantly on the palate.
Serving suggestion:
One of the best ways actually, serve it with salty crackers, fresh figs, some roasted almonds maybe and some jam or marmalade. Great marmalades to go with the cheese is rosehip, fig, pear, quince but most work great. Also a sweet vinegar or pickled fruits can work good, and don’t forget the wine.
Ingredients: Pasteurized cow´s and sheep´s milk, lactic starters, penicillium roquefortine, rennet and salt.
Storage: kept refrigerated at 2°C to 6°C.
