Description

The cheese has a compact texture, with a few pinprick holes. It is dry, but not crumbly, and feels pleasantly oily in the mouth. The characteristic, smoky flavour is the result of the cheeses having been stored near the fireplaces

Serving suggestion: Our Idiazabal is delicious enjoyed on its own with fresh bread and chutney or our apple jelly with a glass of our rioja red wine. It also makes the perfect addition to a post-dinner cheese board.
