Paleta 100% Iberica de Bellota (Acorn fed 100% Iberian Shoulder) Los Chanetes
Front leg from Iberian pigs selected from birth on farms in Extremadura and Andalusia, with which Los Chanetes has been working for years, ensuring comprehensive control of the breeding and processing process. They spend the first stage of their life on a farm, feeding on natural cereals manufactured in the brand’s facilities until they reach a weight of between 40 and 50 kg, when they enter the pastures. There they enjoy an exquisite diet made up of this selection of cereals as well as grass, tubers, roots and acorns, reaching 90/100 kg at the beginning of October (when the montanera begins), when the acorns fall and which they feed exclusively on until they reach an approximate weight of 180 kg in their adult stage.
IMPORTANT: Due to a decision made by our supplier, this product is packaged in absorbent paper and shipped in an individual box. IT DOES NOT INCLUDE A FABRIC COVER.
TASTING NOTE
In our 100% Iberian Bellota Shoulder “Pata Negra” we discover a ruby red hue, a delicate grain and a high percentage of oleic acid that helps maintain an adequate level of cholesterol in the blood, as well as being rich in proteins, vitamin B1, iron, zinc, magnesium, folic acid and vitamin E (excellent antioxidant).
On the nose we recognize intense and pleasant aromas exclusive to 100% Iberian Bellota ham, typical of its character and personality.
On the palate we appreciate an intense and persistent flavor with a sweetness characteristic of the 100% Iberian Bellota Shoulder due to a reduction in the time of salting and long maturation, achieving a healthier and tastier product, pleasant for all palates.
