Description
A Commitment to Excellence
This Cebo de Campo loin is sourced from 100% Iberian pigs, chosen for their superior genetics and reared with meticulous care. During the first stage of their life, these pigs are fed on natural cereals crafted in specialized facilities. Once they reach a weight of 40–50 kg, they are transferred to the dehesas—expansive natural pastures where they roam freely.
In these lush environments, the pigs enjoy a diverse diet consisting of cereals, grasses, tubers, roots, and acorns, allowing them to grow to their full potential, reaching an impressive weight of 170–180 kg. This varied and natural diet results in exceptional marbling and flavor in the final product.
At La Tienda by Jose Sol, we pride ourselves on selecting only the finest traditional products, ensuring that every piece reflects the essence of authentic Spanish gastronomy.
Appearance and Flavor
When sliced, the loin displays a beautifully marbled texture with delicate streaks of intramuscular fat, golden highlights, and an inviting deep red color.
During its curing process, the loin is gently smoked over slow-burning oak charcoal, infusing it with a subtle, aromatic bouquet. Its flavor profile features a harmonious blend of smoky notes, a hint of paprika, mild garlic, and a touch of spice, leaving a long-lasting and pleasant aftertaste.
