Our 50% Iberian acorn-fed ham from de Dehesa comes from animals raised in freedom, in the a ancient holm oak forest in the natural park of Sierra de Sevilla, a sustainable ecosystem unique in Europe More than one million hectares of meadows and forests.
The morning mists create a favourable microclimate for the growth of fresh and aromatic herbs, which complement the life of the Iberian pig, the king of this land. These pigs, with unique genetics, travel more than 14 kilometres a day, managing to infiltrate the fat into their skin. the muscle, which gives a juicy and high-quality ham. Their habitat of sun, air, water and wide spaces allows them to develop in ideal conditions.
Fed with herbs, aromatic plants and a large quantity of acorns, the pigs “free range” by bathing in ponds, shaping their structure and achieving meat rich in fatty acids and antioxidants. During the montaneras, where they consume between 12 and 15 kilos of acorns a day, they complete a cycle of 18 to 24 months that defines the unique flavour and texture of the ham.
Bellota hams require time and dedication, qualities that Sierra de Sevilla offers at every stage of the process. For four or five years, in natural drying rooms, our master ham makers control the environment by opening and closing windows, allowing the mountain air to provide that special character in flavour and aroma that distinguishes our products.
