Description
We obtain this salt after a slow evaporation with a southerly wind or a very light wind. It is the first crystallization and requires that the small floating crystals be collected with care and patience from the surface of the salt pans. Because of its slow evaporation, it is collected early or late in the day.
Ancestral salt flower is especially rich in magnesium and potassium. It is the ideal salt for finishing dishes as its crystals are fragile and melt and mix evenly on any cooking or ingredient, giving it that last touch so necessary to our food.
