This 50% Iberian Acorn-Fed Ham is sourced from free-range Iberian pigs raised in the rich ecosystem of Sierra de Sevilla. These pigs roam freely in meadows and oak forests, feeding mainly on aromatic herbs and acorns during the montanera season. Their natural diet contributes to the ham’s distinctive flavor and texture, which has been honed over time with dedication and expertise.
The pigs are raised in an environment unique to Europe, where more than one million hectares of forest and meadows provide the perfect habitat. The cool morning mists and favorable microclimate allow fresh herbs to thrive, complementing the diet of the pigs. They travel more than 14 kilometers a day, which enables the fat to infiltrate into the muscle, giving the ham its juicy and rich quality.
